Cranberry and Goat Cheese Canapés
Yield:   About 18 to 25 servings, depending on length and width of baguette.
Cook Time:   None if serving on soft untoasted bread slices. 5-10 minutes if serving on toasted bread slices.
Tips:   Raw (untoasted) bread slices are recommended, though cheese topping can be served on toasted bread slices, if desired. See Baked Crostini if you prefer to serve these canapés on toasted bread slices.
Suggestion:   These canapés are perfect party appetizers for any time of year, but are especially appropriate for Christmas parties due to their red and green coloring.

Spread each baguette slice (if toasting bread slices, wait until they completely cool before applying cheese) with a modest amount of goat cheese (about 1 1/2 to 2 teaspoons, depending on size of bread slices). Top with a few dried cranberries, then sprinkle a small amount of chopped rosemary on top. Refrigerate any leftovers. (Tip: Refrierating prepared canapés is recommended for untoasted appetizers. Toasted slices will lose their crunch in refrigerator, so try to prepare only enough toasted canapés for your guests and refrigerate leftover cheese and rosemary separately. Toasted bread slices can be stored separately in an air-tight container for a week or more).
